CHOCOLATE BURFI

If you are a chocolate lover then this is one dish that is made for you which is one more easy, quick and delicious recipe. The instant version of chocolate burfi with just few ingredients and guaranteeing a blissful taste. The blend of chocolate and cashews are totally to die for. I bet you can't eat just one. A quick dessert perfect for festivals like Diwali or kids party. Not only children but the elders would love this. Various burfi versions have become popular in different regions of India, which includes Almond Burfi, Gram Burfi [besan burfi], Cashew Burfi, Peanut Burfi and of course today's recipe at as per taste- Chocolate Burfi. If you are anything like me, you will have condensed milk, cocoa powder and butter all the time on hand. So why to wait, just whip and indulge in this tempting Burfi.

INGREDIENTS:
1 tablespoon Cocoa Powder
1 + ½ tablespoon Milk
½ Cup Cashew Powder
½ Cup Biscuit Powder [see notes]
1 tablespoon Walnuts, finely chopped
½ Cup Condensed Milk
1 tablespoon Butter at room temperature

FOR Garnishing:
2-3 Almonds, sliced
1 teaspoon Pistachio Powder


METHOD:
STEP 1 – Take a wide pan, add cocoa powder and 1 tablespoon milk in it.
Mix it well. It will look like a paste. If not then add the remaining ½ tablespoon milk and mix well.
STEP 2 – Then add condensed milk
and butter to it.
STEP 3 – Now mix it properly with a spatula.
STEP 4 – Now put the pan on the stove and swtich on the flame. Keep the flame high.

STEP 5 – Cook the mixture till it starts to boil.[see notes] Continues stirring is important here. Otherwise the mixture will stick to the bottom.
STEP 6 – As soon as the mixture starts boiling, remove from heat.
STEP 7 – Now add cashew powder
and biscuit powder in it.
STEP 8 – Mix it well and get combined with cocoa mixture properly.
STEP 9 – Again put the pan on heat and cook till the mixture get thickened. It will take hardly ½ minute.
STEP 10 – When the mixture get thickened, remove from heat. Add chopped walnut in it. Mix it well.
STEP 11 – In a square box or mould, spread a cling wrap. Pour the mixture on it and spread evenly.
 STEP 12 – Garnish with chopped almonds and pistachio powder.

STEP 13 – Keep it in refrigerator for 1 hour. Remove from refrigerator
and cut into desired shape and serve. 
Chocolate burfi is ready to serve.


NOTES: Here I used Oreo Cookies for my recipe but you can use any sweet biscuits for your recipe.
 It will take maximum 1 minute to start boiling.



SAVORY DOSA WAFFLES

Waffles make quick breakfast recipe and they are easy to tweak in all healthy flours by adding leavening agents that gives it a crispy outer cover and soft inner layers. But this is totally different recipe. Waffles is one of the dishes under list of snacks and I have added an Indian touch to it. Savory dosa waffles recipe is a dish with an Indian twist to the usual waffles. Till today I used to prepare sweet waffles with ice cream. But trying this type of waffles with dosa  batter or chilla batter was like a big dream to me. And finally I tried this dosa waffles and my hubby loved it so much that he wants me to make it again for him. This is a healthy alternative to dosa and is a filling one too. The taste is more like uthappam with all veggies and it takes hardly any time to make breakfast unlike regular dosas. This is very easy dosa waffles recipe that you can try with left over idli or dosa batter and available ingredients in your pantry. As this was my first try, I was very tensed about the outcome. It is good crispy at edges with a soft inside and I am sure that you will love it.  Try using the veggies of your choice and enjoy the yumm breakfast with sambar or milgai podi or any chutney of your choice.

INGREDIENTS:
2 Cups Dosa Batter
1 Big Onion, chopped finely
1 Big Tomato, finely chopped
½ Cup Capsicum, chopped finely
1-2 Green Chilli, chopped very fine [see notes]
2-3 tablespoon Chopped Coriander
1 Sprig Curry Leaves, chopped very fine [optional]
Salt to taste
2 teaspoon Oil
½ teaspoon Cumin Seeds
½ teaspoon Mustard Seeds
¼ teaspoon Turmeric Powder
½ teaspoon Red Chilli Powder [adjust accordingly]

Other Ingredients:
Coconut Chutney, for serving
Onion-Tomato Chutney, for serving
Sambar
1 teaspoon Oil/ Butter, for greasing

METHOD:
STEP 1 – Pre-heat the oven at 180 degree C for 10 minutes.
STEP 2 – Heat 2 teaspoon oil in a small tempering pan, add cumin and mustard seeds and let them crackle.
STEP 3 – Add chopped onion and chopped green chilli and sauté until raw smell disappears.
STEP 4 – Then add chopped capsicum followed by chopped tomato in it. Mix and  sauté well for 2-3 minutes.
STEP 5 – Add ¼ teaspoon Turmeric powder and red chilli powder in it and cook for 1-2 minutes.
STEP 6 – Let the mixture cool for some time.
STEP 7 – Now take dosa batter in a mixing bowl and add the onion-tomato mixture in it.
 STEP 8 – Add chopped coriander and season it with salt.
 Mix it well. [see notes]
STEP 9 – Now grease the waffle mould with oil/ butter and keep ready.
STEP 10 – Then pour 1 ladle full / as required dosa mixture in each compartment of waffle mould. Tap the mould once or twice to remove air bubbles.
STEP 11 – Bake in oven for 20-22 minutes at 180 degree C. [see notes]
STEP 12 – Cool it for 2 minutes and then demould it. Serve it hot.

Serve piping hot dosa waffles with sambar, hot onion-tomato chutney and coconut chutney and enjoy.

NOTES: You can add green chilli- coriander fine paste.
You can add veggies directly without tempering.
The cooking time depends on the Waffle maker.
The batter should be thick but pourable, so don’t add more water and make it runny.
Try using the veggies of your choice and enjoy.


BREAD CANAPES

Bread Canape is a delicious appetiser and crowd pleaser in a party. When I was just watching videos on you tube I came across this bread canapé recipe which is easy to make and tastes delicious. It is stuffed with vegetables and cheese which is all time hit combo at my place. My younger daughter and hubby loves pizza a lot, so I love this recipe. You can add veggies according to your choice. Non-veg lovers can add boiled and shredded chicken pieces instead of veggies or you can add paneer in stuffing. Like pizza, I added grated cheese on the top and sprinkled some chilli flakes and oregano on the top. You will have a burst of flavors while having each bite. These bite sized finger foods which are quick and easy snack and it was my families breakfast today. A great party starter that are ready in no time at all. While making this discs, you will be left with lots of bread pieces which can be used either for some more bread snacks or for making bread crumbs. Serve this perfect snack to your guests which is looking really yummy, healthy and tasty.

INGREDIENTS:
10 Bread Slices
2 tablespoon Oil
1-2 tablespoon Ginger-Garlic Paste
1 Onion, chopped finely
3 Green Chillies, chopped
¼ Cup Carrot, grated
½ Cup Bell Peppers, cubed, all coloured
1 Cup Cabbage, finely chopped
¼ Cup Blanched Sweet Corns
Salt as required
1 tablespoon Garam Masala
½ tablespoon Maggie Magic Masala
3-4 tablespoon Grated Cheese [any cheese]
2 tablespoon Butter
1 teaspoon Mixed Herbs
1 teaspoon Chilli Flakes
1 teaspoon Oil, for brushing canapes

METHOD:
For Making The Stuffing:
STEP 1 - Heat oil in a pan, add ginger-garlic paste in it. Roast it for few seconds.
STEP 2 - Then add chopped onions and cook well until raw smell disappears.
STEP 3 - Add grated carrot and peppers in it and give a nice mix and cook well.
STEP 4 - Add chopped cabbage and blanched corns, stir it well so that everything get mixed well and cook.
Add boiled sweet corns and mix well.

STEP 5 - Now add salt , garam masala
and Maggie magic masala in it and mix it well and switch off the flame.
STEP 6 - Keep the mixture aside and let it cool down.
For Making Canapes:
STEP 1 – Place the bread slices on the clean and dry kitchen cutting board and
 cut the bread slices into round discs with a cookie cutter as shown in the picture.

[see notes ] We need one outer ring  and one disc for one canape.
Cut them and keep them aside. From half discs, we are going to cut a ring with a small cookie cutter and using the ring only.
STEP 2 - Spread butter on the bread discs,
add some grated cheese over each disc and keep the ring over it as shown in the picture below.
STEP 3 - Add 2 tablespoon veggie mix in the center of each canape. Sprinkle some grated cheese over it.
STEP 4 - Sprinkle some more grated cheese, mixed herbs and chilli flakes on each canape.
STEP 5 - Brush the canapes with oil / butter.
 Prepare all the canapes like this with the other bread discs and stuffing.  Arrange them on the baking tray.

STEP 6 - In a pre-heated oven, bake the canapes for 8-10 minutes or until they turn crispy and golden in colour on 160 degree C.
STEP 7 - Cool them for 2-3 minutes in oven and then remove from oven and serve hot bread canapes.

Serve hot bread canapes with any dip of your choice and enjoy.  

NOTES: Cut all bread slice into discs. Then keep half aside. Take the rest and cut them with small cookie cutter. Here we get outer bread rings.
You can add veggies according to your choice or you can add chicken pieces for non-veg option or can replace it with paneer and veggies mixture
Here I sprinkled grated cheese on the top but you can add it in the stuffing too.
You can add some chilli flakes or red chilli powder to the stuffing.
