INSTANT RABDI POPSICLES

Rabdi is one of the traditional sweet of India which is mostly served at festivals. Today I am sharing an easy recipe with Instant Rabdi that is Instant Rabdi Posicles. This is a mouth-watering dessert which no one can resist. Few days back there is a competition in one of the FB food group which has theme as Shahi Dawat and I want to make something hatke dessert recipe for the contest. I thought of so many recipes and at last make up my mind for this quick and simple but super duper hit recipe. This is nothing but made with the instant rabdi which I have prepared already. The recipe of Instant Rabdi is already shared in my blog Earlier. So when next time you are craving for dessert do try this recipe and enjoy. Serve this dish to your friends and relatives on special occasions and relish its amazing flavours with them. 


INGREDIENTS:
1 Cup Fresh Cream [ here I used Amul single cream]
½ Cup Grated Mawa / Khoya
¼ Cup Bread Crumbs
¼ -1/2  Cup Milk
3-4 tablespoon Sugar [adjust accordingly]
Few Saffron Strands
Chopped Nuts for garnishing
A pinch of Cardamom Powder
METHOD:
STEP 1 – Heat a non-stick pan and pour cream in it.
STEP 2 – Cook it on low flame stirring continuously.
STEP 3 – As soon as you see the cream is about to boil, add the khoya and mix well.
STEP 4 – Then add bread crumbs. Stir it continuously. [see notes]
STEP 5 – Now add sugar according to your taste with saffron dissolved in warm milk.
STEP 6 – Cook it for some time. When you see the mixture starts getting thick, just then add milk in it.
STEP 7 – Adjust the quantity of milk [1/4 -1/2 cup] according to your liking consistency.
STEP 8 – Cook further for few minutes. When it starts boiling, switch off the flame and add a pinch of cardamom powder and give a nice stir.
STEP 9 – Cool down and then pour it in popsicle mould
and  keep it into freezer for 3-4 hours to set them completely.

STEP 10 - After 4-5 hours, remove the popsicle mould from freezer, keep the popsicle mould in water for few minutes. Demould the popsicles and serve.



Serve it chilled.
NOTES: Here we added bread crumbs only for thickening the rabdi. You can add less as per your liking consistency.

CHOCO LAVA MODAK

This Ganesh Chaturthi, I have tried so many variations of modak from traditional to modern choco lava modak. Ganesh Chaturthi is one of the important Hindu Festivals celebratde throughout India with great pomp and fare. This day is celebrated as the birth of Lord ganesha.
On ganesh Festival the prasad or naivedya is offered to Lord Ganesha first and then distributed between the family and friends, the feast consists of many varities of savories and sweet dishes, but modak is a must in the menu as it is Ganapati Bappa's  favourite sweet.

I had made 2-3 types of fried modak, then mawa modak, but I wanted to try something new and innovative to offer our Ganapati Bappa, so made a very modern version of his favourites modak, choco lava modak. I have seen so many recipes on you tube and very keen to try it this year. Made some changes as in original recipe there are oreo cookies used for the outer covering. Here for my recipe I used Marie Digestive biscuits. This is an instant and no cook recipe. These tempting modaks oozing out choco lava are ready in no time. Not only your bappa but your family and friends would enjoy them, specially kids would gaga over these. The main reason I tried these choco lava modak is that my younger daughter is not much fond of regular Ukadiche Modak, so tried few versions according to her choice. 


INGREDIENTS:
250 gm Digestive Marie Biscuits(or as per your choice)
150 gm Condensed Milk
1/4 cup Butter
1/4 cup Milk
1 cup Fresh Cream
1/2 cup Sweetened Chocolate

METHOD:
STEP 1 - Make a powder of biscuits in a mixer jar.
STEP 2 - Add butter, condensed milk , milk in it.
STEP 3 - Mix well and make a smooth dough.
STEP 4 - If you are not be able to knead a dough, add milk in it and then knead it.
STEP 5 - Heat cream in a pan and add it to grated chocolate.
Mix it and your chocolate ganache is ready.
STEP 6 - Fill it in a piping bag .Keep it aside.
STEP 7 - Now take a greased modak mould. Start filling it from the bottom but keep the space for filling chocolate ganache in it.
STEP 8 - Pipe chocolate ganache in each modak.
STEP 9 - Seal the bottom with some biscuit mixture.
STEP 10 - Remove the modak gently from the mould.
STEP 11 - Repeat the same and prepare all the modak. Remove from mould and keep them gently on a plate.
STEP 12 - Serve Choco lava modak to your guests and surprise them.


NOTES: *If you are not serving them immediately, then just before serving microwave the modak for just few seconds, which helps to melt the chocolate inside the modak. And when you open the modak , the lava comes out....serve and enjoy.

COCONUT LADDOO

Festivals in India are incomplete without sweets. You can opt to buy sweets from the market. But preparing them at home has its own charm and a personal touch. Coconut Laddoo with condensed milk, a super easy and quick recipe just made in 15 minutes. Here for this recipe just 2 basic ingredients we need that desiccated coconut and condensed milk. Here I used homemade condensed milk for my recipe and the recipe of homemade condensed milk I have already shared here in my blog. A  quick  delicious treat to make for any occasion, celebration or festival. I prepared this for Ganesh Chaturthi. Everyone like it at my place, so I am going to make again for Diwali. By your imagination, you can make many variations to this recipe like using cocoa powder to make chocolate coconut laddoo, or you can dip laddoo in melted chocolate and make chocolate coconut balls. Khoya can be also used for this recipe. In that case you have to reduce the quantity of condensed milk in it. As Navratri is coming, you can try this and enjoy it on fasting by indulging in some tasty vrat recipes. 


 INGREDIENTS:
2 Cups Dry Desiccated Coconut
200 gm Sweetened Condensed Milk
1 teaspoon Rose Water

METHOD:
STEP 1 – Take a bowl, add desiccated coconut to it.

STEP 2 - Pour condensed milk and rose water in that bowl.
STEP 2 – Mix it with hands properly and make a soft dough.[see notes]
STEP 3 – Now take a small portion from dough. Roll it in between your palms and make a laddoo.
STEP 4 – Likewise make all the laddoos with rest of the mixture and serve them.
NOTES: Take a pinch of mixture and try to ball with it, it you are able to do this then the mixture is ready to roll laddoos. If not then add 1  tablespoon condensed milk in it and mix it again. Then roll laddoos.


PLUM SQUASH

Today I have tried something interesting and for this my husband insisted and forced me laterally. Today I am going to share the recipe of Plum Squash which is an easy and quick recipe. Earlier I shared Lemonade recipe in my blog. I love lemonade but now this plum squash is also added in my favourite fruit drinks. It is very refreshing and the lemon added here do not overpower the taste of plum here.The ripe plums helped to reduce the amount of sugar since the fruit was sweet by itself. Here I added sprite in it to give a punch but you can have it plane with water. Taste was awesome both the way. So give a try once and enjoy the fresh plum squash, lime and soda or tequila.



INGREDIENTS:
250 gms Plum / Aloo Bukhara
100 gms Powder Sugar [according to your taste]
1 Glass Water
¼ teaspoon Black Pepper Powder     
¼ teaspoon Roasted Cumin/ Jeera Powder
Salt a pinch
¼ teaspoon Black Salt
1 tablespoon Lemon Juice
10-15 Mint Leaves[for the squash and for garnishing]
Ice cubes for serving

 METHOD:
STEP 1 – Wash the plum and pat dry.
Heat water in a bowl and add plums into it.
STEP 2 – Now cook them well till they becomes mushy and soft.
STEP 3 – Now remove them on a colander and strain the juice by mashing Plums. [you will get the outer covering and seeds get separated]
STEP 4 – Now add sugar in the juice and again cook it for 5-10 minutes.
STEP 5 – Add the cumin powder, black pepper powder, black salt, lemon juice and chopped mint leaves in it and give a nice stir. Now cool it and chill it.
STEP 6 – At the time of serving, garnish the rim of the glasses with red sugar powder, add ice cubes in glass as per your choice.
Pour the squash in the glasses and finally add soda / sprite in it.


STEP 7 – Again add some more ice cubes and garnish with mint leaves and serve chilled.

INSTANT RABDI

India is famous worldwide for its mouthwatering varieties of traditional sweet dishes. One such lip-smacking sweet dish id Rabdi or Rabri which can be made within few minutes with this easy-to-make recipe.I really impressed with this recipe and its results are as awesome and delicious as the original and time consuming recipe of making  rabdi. All you need are just few ingredients which are easily available to get your hands on this scrumptious dish.This recipe is quick and easy to make. It contains less fats than the original Rabdi recipe. This is the easiest dessert recipe you could make. Traditionally it is made by boiling milk and the cream is collected for about 1-2 hours. I didn't have that much patience as festivals are going there. So went with a quicker and instant version.It is delicious, creamy and perefct for any festival or party. It can be served as it or you can serve it along with Malpua or Jalebi. For better taste serve it chilled or at room temperature. So do try it next time you have your kitty party or get together or any other occasion and don't forget to share your experience.

SPICY CORN

This recipe is remarkable, refreshing and satisfying,particularly in the rainy season or a winter day. You can add any vegetables you like or you can have it plane. It is my favourite dish when freshly picked corn are in season.  Boiled corn kernels are mixed with butter and Indian spices. This is quick, simple, flavorful and spicy snack recipe. During monsoon season, corn is widely available in India. Here I used sweet corn for my recipe but you can use our regular desi corn for this. I have already shared one more recipe for corn salad earlier in my blog along with some sandwich recipes using corn kernels.  



INGREDIENTS:
1 Cup Sweet Corn Kernels
1 teaspoon Butter
½ teaspoon Red Chilli Powder
Salt as needed
½ teaspoon Lemon Juice
A pinch of Pepper Powder
¼ teaspoon Mixed Herbs
METHOD:
STEP 1 – Heat butter in a non-stick pan.
STEP 2 – Add corn in it and roast for 1-2 minutes.
STEP 3 – Switch of the flame. Now add red chilli powder and other spices in it.
STEP 4 – Drizzle some lemon juice on it and mix it and serve.


Serve hot and enjoy.
