CHANA DAL VADA / MASALA VADA/ CHANDRAPURI VADA




Masala vada is one of the famous recipes from South India, which is made with Chana Dal or Bengal
Gram. It is also famous in Maharashtra in South –East part .The method of of preparing masala vada is
similar to Falafal, instead of ground white chickpeas, chana dal is used here. It may be used as tea time
snack.






INGREDIENTS:


1 cup  Chana Dal

1cup Spinach leaves [palak]

1cup Different veggies as per your choice [all colour capsicum, spring onion]

3-4  Green chillies

1 Tbsp Ginger-garlic paste

Chopped onion

Fresh coriander

Turmeric

Salt Cumin seeds

Oil for frying


METHOD:


STEP 1 - Soak Chana Dal for 5-6 hrs. , drain the water and grind roughly in mixer grinder.



STEP 2 -  Add finely chopped  Palak and other veggies,  turmeric  ,salt , cumin seeds , ginger -garlic   paste and fresh chopped coriander in it and mix well .


STEP 3 - If u need add some besan [chana dal flour] or rice flour for binding purpose. I added besan.


STEP 4 - Now heat oil in a pan.

STEP 5 - Take just little batter and make tikkies using your palm and deep fry.

                
                      Serve hot with tomato sauce /mint chutney / some other chutney .

CHOCOLATE MICROWAVE BROWNIES



This recipe with really help you to create authentic Chocolate Brownies with simple ingredients which are easily available .This recipe just needs to work in the right way which will give you an output of the perfect dish which you can serve with tea or as a desert ,with a topping of ice-cream.Whichever way you choose to have it ,you are going to fall in love with this rich chocolate experience.


  
INGREDIENTS:

3 Eggs

1 cup Granulated sugar

1 cup Oil

1 cup Refined flour

1½ tsp Baking powder

¼ cup Cocoa powder

Caster sugar

Cherries

Chocolate Sauce



METHOD:

STEP 1 – Beat Granulated sugar, egg and oil in a large bowl.

STEP 2 – In another bowl, mix baking powder,cocoa powder,refined flour together and add this to the egg mixture part by part.

STEP 3 – Grease a baking tray and pour the mixture.

STEP 4 – Put it in microwave for 7-8 mins. at 80`C.

STEP 5 – Take it out ,let it cool ,demould it. Sprinkle some caster sugar,cherries and pour some chocolate sauce.

                 Chocolate Brownies are ready…!!!

SHAHI BREAD TUKDA / TUKRA



Shahi bread tukda is one of the rich royal mughlai dessert in the traditional way .One piece of shahi tukda will give you a feeling of royality.It is rich in taste ,aroma ,flavour and calories too .

Shahi tukda is rich bread pudding .Toasted bread covered with creamy milk known as Rabdi. 



INGREDIENTS:


4 Bread slices

Clarified Butter


For SUGAR SYRUP:


1 cup Sugar

1 cup Water

Pinch of Cardamom powder


For RABDI :


½ lit. Milk

½ cup Condensed Milk [ Milkmaid ]

Nutmeg Powder

Cardamom Powder

Saffron Threads

Dry Fruits [ Desired, Chopped Finely ]

  

METHOD :


STEP 1- Cut the bread slices in triangular shape .


STEP2 - In a non–stick pan , on a medium flame ,fry the bread slices till golden brown . Keep them aside.


STEP 3 - Then in another sauce pan at a medium flame , heat milk ,add cardamom powder .


STEP 4 - In a small cup , take 2-3 spoons of hot milk and put the saffron threads into it ,which afterwards has to be added to the whole milk .

STEP 5 - Add condensed milk in the boiling milk so that it gets thickened. Add the saffron milk into it.

STEP 6 - After that switch off the flame and let it come to room temperature.

STEP 7 - Meanwhile , prepare the sugar syrup and add cardamom powder to it .Remove it from heat.


STEP 8 - Dip the bread slice in the sugar syrup and allow bread slices to soak up the syrup.


STEP 9 - Then pour the milk over the bread, let it soak the milk by leaving it for 10-15 minutes.

STEP 10 - Garnish with sliced dry fruits .

                  You can serve it hot / cold .

GARLIC BREAD

Quick and scrumptious Garlic bread that will complement any Italian meal .Melted Mozzarella is optional ,but delicious ! It is really some of the best stuff on earth.Garlic ,bread,butter that's all you need for this truly outstanding ,party -winning recipe.

INGREDIENTS :

6 Bread slices
Grated cheese [as per your liking ]
1/2 Tsp Oregano
1/4 Tsp Black pepper powder
2 Tsp Garlic cloves fine paste
1 Tsp Red chilly flakes [optional ]
2-3 Tbsp Butter 

1 Tsp Garlic Bread Seasoning [optional]
 

METHOD :

STEP 1 - Take a bowl and add butter, seasoning with garlic paste .


STEP 2 - Apply this garlic butter on bread slices and add some grated cheese with chilly flakes ,oregano and black pepper .[ cheese is optional]


STEP 3 -  Heat a non stick pan , keep the bread slices in it n cover it using a lid. Cook it for next 15 minutes.
                    
                           Your garlic bread is ready to serve . Serve them hot and post your comments.

DABELI

Dabeli is basically a Gujarati snack,originating in Kachch. Dabeli is a spicy potato mixture combined with onion, garlic chutney, tamarind chutney, spiced masala peanuts and pomegranate. Since Dabeli masala is easily available ,you can recreate the roadside experience.



INGREDIENTS :


Bun pav /Ladi pav-6/1(respectively )

3 Potatoes
1 and 1/2 tbsp Dabeli masala
3 tbsp Oil
Salt to taste
1 tsp Lemon juice
1 cup Sweet date tamrind chutney
1 tbsp Sugar
1/2 cup Masala peanuts
1/4 cup Grated coconut
1/4 cup Fresh pomegranate carnels
1 cup Nylon shev
fresh chopped coriander
1/4 cup Garlic chutney
Medium size chopped onion
Butter

Water

METHOD :
 

To make the STUFFING:
 

STEP 1 - Heat the oil in a non stick pan . 
STEP 2 - Combine dabeli masala ,sweet date tamarind chutney and little water in a bowl ,mix well . Put this mix in the pan and cook for 1min on medium flame.
STEP 3 - Now add boiled ,peeled off and mashed potatoes ,salt , a little water and cook for another 2-3 min . While cooking stir it continuously and mix well .

STEP 4 - Now remove it from pan ,put it in a plate ,press well with spatula ,sprinkle coriander ,coconut ,pomegranate , masala peanuts n nylon shev .




To make a DABELI:

STEP 1 - Take a pav/bun ,make a slit on two sides only .(keeping joined on two sides ).

STEP 2 - Apply garlic chutney and  tamarind chutney on the inner sides of pav .
STEP 3 - Stuff the potato mix ,onion ,peanuts and shev .Repeat with the remaining pav and make rest dabelis .


STEP 4 - Just before serving , cook each of  the dabeli on a hot tawa [griddle] with little butter on the griddle /tawa .


                       Serve immediately with extra hot garlic chutney or tangy tamarind chutney .....enjoy
 


NOTE :

 For garlic chutney-
Take 1/2 cup garlic cloves ,red chilly powder and salt as per taste and grind it in mixer with little water ....Detail recipe in chutney section.
