WHEAT FLOUR SHEERA / ATTE KA HALWA

Atte Ka Halwa or Wheat Flour Sheera or Kada Prasad is popular Indian Dessert recipe prepared mainly with wheat flour, ghee and sugar/ jaggery. It is rich and contains an equal amount of sugar and ghee and hence typically prepared for festivals and occasions. Wheat flour halwa can be made instantly whenever you feel like eating something sweet at home.It is delicious and equally nutritious. So lets make wheat flour halwa today in the dessert for your family members. Just note a few simple points and success is assured to make a perfect atta ka halwa : Do not compromise on the quantity of ghee else atta halwa becomes sticky and not yield the perfect taste and texture. It is important to roast the halwa on a low flame otherwise, you may get raw taste if under roasted or burnt flavour if over roasted.  

INGREDIENTS:
1 Cup Wheat Flour
2 tablespoon Fine Sooji
1 Cup Sugar
1 Cup Clarified butter [ghee]
2 tablespoon chopped Dry fruits [almonds, cashews and raisins]
1 teaspoon Cardamom Powder
1-1/2 Cups Water / Milk

METHOD:
STEP 1 - Heat a deep pan and  put clarified butter in it. Add almonds, cashews and raisins and let them roast for 1 minute.

STEP 2 - Add wheat flour and sooji in it and roast it continuously.

STEP 3 - Keep cooking till the colour changes to brown and ghee separates. It takes hardly 8-10 minutes.

STEP 4 - Now add hot milk / hot water and give a nice mix.

STEP 5 - Immediately cover it with a lid and cook for 3-4 minutes. You have to stir it in between. 

STEP 6 - Then add sugar and mix well. Cook this by stirring it.

STEP 7 - Again cover it with lid and cook for 2-3 minutes or till it becomes dry.
If you feel halwa sticky then add 1-2 tablespoon ghee more.

Your halwa should look glossy and non-sticky.   

STEP 8 - Finally add cardamom powder and mix well. Your halwa is ready to serve.

Serve it hot with some more almonds slivers.
               

NOTES : * Clarified butter should be added in a quantity that the flour while roasting becomes semi-liquid.It makes the halwa more tasty.
               * Sooji gives a nice crunch to your halwa. But if you don't like you can skip adding sooji.
