Ragda Patties /Pattice is a favourite chaat recipe. My three favourite chaaat recipies at any chaat counter would be of course Ragda pattice ,Pani Puri and Sev Puri. This dish actually makes a complete meal and one that takes very little cooking time.
INGREDIENTS:
For RAGDA [GRAVY]:
2 cups Green peas
1 tbsp Ginger garlic paste
Red Chilly powder
Haldi
Garam masala
Cumin seeds
Salt Oil
For PATTY:
4 Boiled potatoes
1-2 Chopped onions
Green fresh coriander
salt
2 Slices Fresh bread
Green chillies ( optional )
For GARNISHING:
Nylon shev
1 chopped onions
Chopped coriander
Lemon
METHOD:
For Patties:
STEP 1 - Boil the potatoes ,peel off and mash them . Add chopped onions ,coriander , chopped green chillies and salt as per taste .
STEP 2 - Just crumble the fresh breads and add to potato mix ,
make a dough .
With this dough make small sized patties . Keep the patties aside.
STEP 3 - Pressure cook the green peas , cool them and mash .
Put a pan on gas ,add some oil and crackle some cumin seeds.
STEP 4 - Now add ginger -garlic paste ,saute it for a while .
Add red chilly powder ,haldi ,garam masala and salt .
Roast the spices and add mashed peas .
For a minute saute it and add water .
STEP 5 - Cook it for next 5 minutes . Your gravy/ragda is ready .
STEP 6 - Now take the potato patties and just shallow fry on a tawa with little oil .
Once all the patties are done it's platting time .
Patties should be fried till they turn brown .
STEP 7 - For platting -put two -three patties in a plate , add ragda on it ,
garnish it with chopped onions ,chopped green fresh coriander and shev .
Add some lemon juice on it . Your ragda patties is ready .
NOTE :
You can use some tamarind chutney for the tangy taste ,it's optional .
If green peas not available you can use the dry peas and soak them overnight and then pressure cook .
