GINGER SOUP

For me, soups are meant to be nurturing and comforting meals. From the wide variety of warm soups that comfort the soul and make you happy, there is something uniquely special about ginger soup. A light and easy soup to prepare at home which is packed with all things healthy and nutritious. This simple recipe would require minimal effort as it involves such simple ingredients from the pantry as tomato puree, ginger, garlic, butter and black pepper for seasoning. All it requires to make it is to sauté the grated ginger and minced garlic with crushed dry red chillies and further simmer it in tomato puree and water for a few minutes. It is one of the most flavourful and easiest soup I have had ever. I have been never a fan of the store brought soups. Most of them taste like a slimy blend of stale vegetables in tasteless broth. This recipe of soup brings together the goodness of ginger and garlic in convergence with the freshness of tomatoes in a wonderful manner.


INGREDIENTS:
1 tablespoon Ginger, grated
½ teaspoon Garlic, minced
2 tablespoon Corn Flour
2 Dry Red Chillies
½ Cup Tomato puree
½ tablespoon Butter
¼ teaspoon Black Pepper Powder
2 Cup Water [adjust accordingly]
Salt as per taste
METHOD:
STEP 1 – Heat a sauce pan/ vessel on low flame. Add Butter in it and then add minced garlic, grated ginger and crushed dry red chillies and sauté well for few seconds until raw smell vanishes.

STEP 2 – Then add corn flour and mix well.
Roast well for next one minute or till the rawness disappears.

STEP 3 – Now add water followed by tomato puree and mix everything well.

STEP 4 – Let the soup mix and simmer and cook for few minutes.

STEP 5 – Season the soup with salt and black pepper powder and mix well.

STEP 6 - Once you reach the desired consistency, switch off the flame and soup is ready to serve.

Pour piping hot soup in individual serving bowl and serve hot with some grilled bread slices or garlic bread.  Garnish it with herb or your choice.


NOTES: Corn flour helps to thicken the soup.
