INSTANT CHAPATTI LADDOO

Chapatti Laddoo is a tasty snacks made from fresh or leftover chapattis. We always make a specific number of chapattis for breakfast or tiffin but sometimes it happens that the chapattis are leftover. If chapattis are leftover then this is the best way to consume the leftover chapattis. We have some other options too to finish up the leftover chapatti like make Chapatti Upma or you can make Chapatti Noodles. But here at my place I need some sweets every time as my daughter and husband love to enjoy sweets after dinner every day. For this recipe you can use fresh chapattis as I used, just follow the steps and within few minutes the yummy laddoos are ready. Chapatti laddoo is an easy and delicious sweet with fresh or leftover chapatti or roti.
Early morning there is more or less same story in every Indian household…what to cook for kids lunch box????? Something that should be healthy, filling and at the same time should not take long to cook. Here is one such easy sweet recipe which can be made in a jiffy with just 3 ingredients. These laddoos are an excellent and healthy snack for kids, you can serve them as a dessert. If your kids are not fond of chapatti  then this is the best way to feed them chapatti. Just grind them with jaggery in a mixer pot and add some ghee and chopped nuts and serve them this fresh chapatti laddoos. The Instant Chapatti Laddoo can also be served as after school sweet snack or to satisfy hunger or sweet cravings. Yes… this is also one of the best ways to utilize the left over chapatti or make it with fresh chapatti as I have prepared.

INGREDIENTS:
For Making Chapatti:
1 Cup Wheat Flour
Salt as needed
1 teaspoon Oil
Water as required to knead the dough

For Laddoo:
5-6 Chapattis
¾ -1 Cup Grated Jaggery
2-3 tablespoon Ghee / Clarified Butter
½ teaspoon Cardamom Powder
5-6 Chopped Almonds
5-6 Cahsews
6-7 Raisins

METHOD:

For Making Chapatti:
STEP 1 – In a mixing bowl, add wheat flour, salt and oil and mix it well using hands.
STEP 2 – Now start making a dough by adding water little by little. You have to make a smooth chapatti dough.
STEP 3 – Divide the dough in equal portions and make chapattis with it.
STEP 4 – Roast the chapatti as we do it regularly

but make them crispy and crunchy on low heat. [see notes] If using leftover chapatti roast them again
on a hot tawa on medium-low flame and make them crispy.
STEP 5 – Remove and keep aside till they cool down.

For Making Laddoo:
STEP 1 – Now break the chapattis into small pieces.
Take all in a mixer pot or blender and pulse them few times in it.
STEP 2 – Remember we need a coarse powder of chapatti, so grind it accordingly.
STEP 3 – Add jaggery in it and pulse till get well combined with chapatti powder.
STEP 4 – Transfer this mixture in a mixing bowl. Keep aside.
STEP 5 – Heat ghee in a small tempering pan and add cashews and raisins in it and roast until the cashews changes its colour to golden brown.
Remove it and keep aside with chopped almonds.

STEP 6 – Add chopped and fried nuts to the ground jaggery-chapatti mixture. Add cardamom powder and mix well.
STEP 7 – Now heat ghee in small pan and add it to the chapatti mixture when it is hot.
Mix well and start rolling laddoos.[see notes]
STEP 8 – Take a small portion of this mixture and shape it into a lemon size ball.
STEP 9 – Likewise, prepare all the laddoos and arrange them on a serving plate and serve.

You can serve them immediately as a snack or dessert.
You can store them in an air tight container in refrigerator or at room temperature and can relish them 3-4 days.

NOTES:  *Break chapattis into small pieces, put them on a baking tray and bake in oven for 5-10 minutes to make them crispy.
*Using hot ghee helps to roll the laddoos easily.
