SABUDANA WADA / साबुदाणा वडा

This is another simple but simply delicious snack.A maharashtrian delicacy commonly made during fasts. Sabudana wada is a snack with great texture.It is crunchy on the outside and soft inside.This is a sure winner anytime of the year. Sabudana Vada is a popular snack dish in Maharashtra and also in other parts of the India especially during fasting days like Navratri. During this vrat or fast, sabudana is the most common and popular ingredient. We can make many recipes with it. These vadas are crunchy on the outside and soft on the inside so whether you serve them for breakfast or as snack. Addition of crushed peanuts provide nutty flavour. As a spicy ingredient, only chopped green chillies are added. Make sure to serve them hot and fresh with spicy chutney or ketchup and hot chai for the ultimate and satiating breakfast or snack experience.

INGREDIENTS :
For VADA :
2 cups Sabudana ( sago ) ( see notes )
2-3 Green chillies, chopped
1 cup Roasted crushed Peanuts
Few Curry Leaves ( optional )
2 tablespoon Chopped Coriander ( optional )
2-3 Potato, boiled 
Salt to taste
Oil for frying 

METHOD:

How to make Vadas:
STEP 1 - Soak sabudana for 5-6 hrs . (. see notes )


STEP 2 - Roast the peanuts and make coarse powder of it .


STEP 3 - Boil ,peel and mash potatoes . 
STEP 4 - Chop green chillies .
STEP 5 -  Now mix all the ingredients with salt and make a dough .

STEP 6 -  Heat enough oil on medium flame.

STEP 7 - Now wet your palms with water, divide dough equally and start shaping the vadas with wet hands.
STEP 8 - Flatten it , heat oil in deep kadai and gently slide vadas in hot oil.

STEP 9 - Deep fry in hot oil til brown color . Flip it gently when done from one side.
STEP 10 - Remove when vadas are golden brown in colour.

STEP 11 - Drain excess oil on tissue paper and serve hot with chutney.


For CHUTNEY :


INGREDIENTS:

2-3 tbsp Roasted peanuts powder
2 tbsp Curd
Salt to taste
1-2 Green Chillies
2 tablespoon Coriander 

 METHOD :

STEP 1 - Mix all the ingredients like peanut powder ,curd ,green chillies , salt in m chutney pot.

STEP 2 - Blend to make a fine paste. Add 1-2 tablespoon water while blending. 

STEP 3 - Add more water to adjust consistancy of chutney . 

             Your vada -chutney is ready for serving ,serve hot and enjoy ......... 


NOTES - *Rinse sabudana under tap water. Rub the pearls with your hands until the water runs completely clear.Ho
* Transfer the sabudana to a large bowl. Add 1 cup of water to sabudana. Just enough to cover them. How
* Cover and allow it to rest for 4-5 hours.
* After the resting time is over, there will be hardly any water left at the bottom of the bowl. 
* To check, take a soaked sabudana pearl and press it in between your fingers. If it gets squished easily (when pressed), you are all set to make a perfect non-sticky sabudana khichdi / vada. 
* You can adjust green chillies as per your requirement both in vada as well as in chutney.
* If you prefer then only add curry leaves, chopped coriander otherwise feel free to skip. The taste will remain same.
