KARACHI FRUIT BISCUITS / KARACHI BAKERY STYLE TUTTI FRUTTI COOKIES

Tutti Frutti cookies are addictive and make a perfect tea time snack. I love Karachi biscuits very much by its looks and wanted to try it at home. I was very keen to recreate the texture and flavour of these famed biscuits. So I tried it at Diwali and gifted them to my cousins as Diwali gift. The buttery, crumbly, softness and mild crunch of the candid fruit…….yeah I love it..!! Chai time is probably the best time of the day for everyone in India.  A typical evening in North Indian household would be chai with samosa or pakoda and off course some biscuits and these Karachi biscuits are the best option to serve with the evening chai. Here a lot of people love to dip the biscuit in the chai and it somehow tastes extra delicious that way….. even I like this way. Some other cookies like Jeera biscuits or oats biscuits are my favourites other than this Karachi biscuits. The best part about these cookies is that these are very very easy to make. You need very few ingredients for making these Karachi biscuits. Hope you guys give these Karachi biscuits a try, it will definitely make your chai more enjoyable.


INGREDIENTS:
1 Cup All Purpose Flour
2 tablespoon Vanilla Flavoured Custard Powder
½ Cup Salted Butter, softened
½ Cup Powder Sugar
½ Cup Tutti Frutti / Candid Fruit
¼ teaspoon Cardamom Powder
½ teaspoon Rose Essence [or use as per your liking]


METHOD:
STEP 1 – Sift flour and custard powder in a mixing bowl.

STEP 2 – In another bowl, place butter, add sifted powder sugar in it. Beat on low speed initially, until the sugar is mixed with butter. Then you can increase the speed to medium and beat till light and creamy.

STEP 3 – Add cardamom powder, essence and tutti frutti and mix well.

STEP 4 – Now switch to the lowest speed and add the flour in small batches and blend till get combined with the butter mixture.
Gently bring it together to make a dough. [do not knead ][see notes]

STEP 5 – Make a soft dough and shape it in a log.

STEP 6 – Wrap it in a cling wrap and refrigerate it for 3-4 hours or overnight.

STEP 7 – Now remove the log from refrigerator and remove the cling film.

STEP 8 – Pre-heat the oven at 180 degrees C/ 350 degrees F for 10 minutes.
STEP 9 – Line a baking tray with parchment paper.

STEP 10 – Cut the log into slices about ½ “ thick .
STEP 11 - Lay the cookies on the baking tray with safe distance as they expand when they bake.

STEP 12 – Bake the cookies for 13-15 minutes. When the bottom of cookies begins to brown, they are done. They will be soft in the middle, but will firm upon cooling. Keep them for 5 minutes in the oven.

STEP 13 – Remove from oven, cool them for 5 minutes in the baking tray and then shift them on the wire rack to cool completely. Cookies are ready to serve.


Serve them at tea time and enjoy with a hot cup of tea or coffee. The cookies stay good for 2-3 weeks when stored in an air tight container.


NOTES: * If the dough is to dry then sprinkle few teaspoon milk in it.
              * Do not add too much. If require then only add milk.
