This rich chocolate mug cake has a touch of espresso, enhancing
the bittersweet tones of the chocolate and making this mug cake even more
pleasurable. This recipe should come out to be a nice chocolate espresso moist
cake. I personally love this mug cake and enjoyed it with a scoop vanilla ice cream.
This is perfect mug cake for anyone looking for a cake the combines both coffee
and chocolate. This one is perfect for those nights or mornings where you just
want a quick and easy cake. A lot of microwave vary in their cooking settings
so you may find your espresso mug cake may need a little longer or a little
less cooking. This is simply cooked in a 800W microwave set on the highest
setting.
We were so delighted when we tried this recipe and it comes
out too yummy. What I love about microwave mug cakes is that they create a lot

INGREDIENTS:
3 tablespoon All Purpose Flour
1 teaspoon Instant Coffee Powder
2 tablespoon Drinking Chocolate Powder / Sweetened Cocoa
Powder
2-3 tablespoon Sugar
¼ teaspoon Baking Powder
2 tablespoon Milk
1 Egg
2 tablespoon Oil [I
used vegetable oil]
½ teaspoon Vanilla Extract
METHOD:
STEP 1 – In a mixing bowl combine all purpose flour, coffee
powder, sugar and baking powder. Mix the dry ingredients and mix well.
STEP 2 – Add milk, egg, oil and vanilla extract, stir with a
fork. Mix both the mixtures from step 1 and step 2, until
combined together. Ensure that no lumps are there.
STEP 3 – Grease the coffee mugs with some clarified butter.
Pour this ready cake batter in to the mug.
STEP 4 – Now microwave the mug on high for 90 seconds [or a
few seconds more] until cooked through. [ do not overcook]
STEP 5 – Serve this ready mug cakes plain or with a scoop of
Vanilla Ice cream or simply dust the powdered sugar. You can serve it with
heavy cream or whipping cream also.
Serve this hot chocolate mug cakes with a chilled vanilla
ice cream and enjoy.
NOTE: You can replace the cocoa powder with drinking
chocolate mix. Keep in mind this will make sweeter so you may need to reduce
the sugar a little bit.
As I mentioned above in the recipe cream and ice cream both
goes really well this recipe. If you feel like spoiling yourself a little more
then sure to try fresh or frozen raspberries.
