BATATYACHA SHEERA/ POTATO HALWA

Potato is widely eaten food across the globe. For someone who is fasting potato offers good carbohydrates and potassium. This is one of the uncommon desserts normally cooked during festivals like Janmashtami/ Shivratri. You can replace ghee with vegetable oil but then it will not have the same flavour and taste as the original dish. Desi ghee gives a nice aroma and flavour to this halwa. Aloo / Potato halwa is an amazing halwa recipe with simple and handy ingredients like aloo, sugar, ghee, saffron and topped with dry fruits and nuts. This is too delicious with lots of dry fruits and appropriate for any festive season. You can make it for your weekend dessert after your meal. This is really an easy to make sweet dish which one can make in jiffy with minimum ingredients from pantry for special occasion and everyone will love it. INGREDIENTS:
3-4 Potatoes, boiled
½ - ¾ Cup Sugar
½ teaspoon Cardamom Powder
Few Saffron Strands
3-4 tablespoon Pure Ghee
Chopped Almonds, Cashews, Raisins and Pistachios
METHOD:
STEP 1 – Boil potatoes, let them cool and peel them. Grate them using a grater. [you can use mashed potato]Keep this aside.
STEP 2 – Soak saffron strands in 1 teaspoon milk and keep it aside.
STEP 3 – Now heat pan with ghee on low flame.
STEP 4 – Add chopped nuts and raisins in it and let them turn brown.
STEP 5 – Then add grated potatoes and mix very well. Saute and cook for 4-5 minutes.
 The colour slightly changed to light yellow and ghee separates from sides.

STEP 6 – Now add saffron milk
and sugar and give a nice stir so that everything get mixed properly.
STEP 7 – Stir it continuously until sugar is absorbed and sheera starts to leave the sides. It will take 5-7 minutes.
STEP 8 –  Sheera/ Halwa is ready.
Switch off the heat and serve hot.
