FRUIT CUSTARD

A timeless recipe that has been enjoyed for generations, the Fruit Custard is an appealing mix of fruits and custard. It is one of the handiest desserts that you can whip up any time you are expecting a visitor because it is kind of easy and fullproof to make and you can be sure that everybody will live it. I prepared this specially as the holy month of Ramzan/ Ramadan is going and market is flooded with fruits. The holy month comes to a close on Eid-Ul-Fitra and I am posting this recipe. It can be also used as a summer dessert which is not only simple but very healthy and requires very little cooking time free of fancy ingredients. You can also make it in advance, chill it and serve. 

Apart from Kheers, Gajar/ Carrot Halwa was considered to be the most fanciest dessert that one can serve at get togethers or to guests especially in South India. So do try this delicious fruit custard topped with a big dollop of ice cream and colourful tutti frutti. Refreshing and cooling and perfect for hot summer days.

INGREDIENTS:
2 ½ Cups Milk
2 tablespoon Custard Powder [plain or any flavour], I have vanilla flavour
2-3 tablespoon Sugar
Fruits of Your Choice:
1 Medium Banana
Mix Fruits [take as per your choice - apple, papaya, orange, chikoo, mango]
15-20 Dried Cranberries
Other Ingredients:
4-5 Scoops Vanilla Ice cream
1 tablespoon Chopped Nuts
Few Cherries for garnishing
METHOD:
STEP 1 – Wash the fruits thoroughly and cut them and chill them in fridge. [see notes]

STEP 2 – Put ½ cup milk in a cup and add custard powder in it and mix well. Make sure it is free from any lumps. Keep it aside.

STEP 3 – In a sauce pan, heat milk.

STEP 4 – Add sugar in milk and stir it well until it dissolves.
STEP 5 – When the milk turns hot, pour the custard mixture in it little by little and stir it well. 

Stirring helps to avoid lump formation.
STEP 6 – Keep stirring and cook on a low to medium flame until the custard turns thick. It takes hardly 3-4 minutes.

STEP 7 – Switch off the heat and whisk it well to make it smooth. Cover and cool this mixture completely and chill it.
Serving Fruit Custard:
STEP 1 – Remove the custard from fridge and whisk it well to make it smooth.

STEP 2 – Peel and chop the banana and other fruits to bite size.

STEP 3 – At the time of serving, add them to custard mixture and mix well. [see notes]
STEP 5 – Pour the custard in individual bowls or glasses.

STEP 6 – Add 1-2 scoops of vanilla ice cream to it. Garnish it with some chopped nuts and some cherries and serve chilled.


NOTES: *Don’t cut banana before. Cut it at the time of serving only.
                *You can chop the fruits and add them into individual serving bowl and then pour the         custard mixture over it and mix it.
