BESAN KI BURFI/ बेसन वडी


Besan ki burfi is a special, delicious and beautiful festival delight, which is very easy and quick to make. My family is a big fan of desserts and Indian Sweets. One of these is besan ki burfi which is a sweet like candy and ha a fudge like consistency. Made with roasted besan[gram flour], ghee and sugar. It is then flavoured with cardamom powder and similar to any other burfi recipe, besan ki burfi can also garnished by chopped nuts like almonds and pistachios. The mouth-watering aroma of roasted besan and mildly sweet taste of these burfis will just make you crave for more. This burfi is perfect for any occasion. It is common dry sweet recipe prepared especially during winter and or during festivals like Diwali or Navratri.  Prepare this tasty besan ki burfi with the help of a detailed recipe, its step by step pictures and recipe is given below.


INGREDIENTS:
2 cups Gram Flour / Chickpea Flour / Chana Dal Flour
1 cup Powdered Sugar
3/4 th - 1 cup Pure Desi Ghee + 1 teaspoon for greasing
½ teaspoon Cardamom Powder
10-12 Cashew, Pista and Almonds, sliver
Silver Warq
METHOD:
STEP 1 – Heat a non-stick pan with 3/4 cup ghee ( see notes ). Add gram flour in it, mix it and sauté well on low heat.

STEP 2 – Cook it further for 10-15 minutes or until it starts changing colour and is fragrant. Continuous stirring is very very important here.

STEP 3 – Add cardamom powder and nuts in it and switch off the flame.


STEP 4 – Remove from heat and mix very well using a spatula.

STEP 5 – Let it cool for some time. When it is still warm, add powder sugar in it and give a nice mix so that we should get a lump free mixture.

STEP 6 – Grease a baking tray or flat plate with ghee. 
Pour the mixture in the tray and spread it evenly. Tap the tray once or twice on the counter table to remove air bubbles.


STEP 7 – Let it cool for 1-2 hour or until it is set. 

STEP 8 – Garnish it with silver warq and some chopped pistachios, press them with gentle pressure .

STEP 9 – When it sets, cut it in to small squares or diamonds or any desired shape.


STEP 10 – Serve it immediately or store in an air tight container for further use.


NOTES: * Quantity of ghee may vary from 3/4 cup to 1 cup depending upon the quality of besan.
* First add 3/4 cup and if you feel the mixture is dry, you can add more.
