STEAMED YOGURT / BHAPA DOI


 Bhapa Doi or Baked Yogurt is hung curd blendid with milk and condensed milk and baked with a water bath in the oven or steamed on the stove top is must have sweet dish in the Bengali Weddings and special occasions like festivals etc. Bhapa Doi is a very delicious steamed sweet yogurt. Most of the Bengali sweets are made of fresh homemade paneer or with curd. This is such a mouth-watering dessert which is made of condensed milk and yogurt with lots of nuts. It is an amzing dessert dish which is liked by people of all age groups. A very simple, easy and quick dessert. The flavourful  Bhapa Doi is a good option for you when you want to prepare something very tasty and delicious for festivals or kitty party at your place for your friends and family. Everyone will enjoy each bite of this. A perfect dessert to treat your family and friends especially on special occasions. 

INGREDINTS:

1 Cup Milk

1 ½ Cup Thick Set Curds [I used Amul]

400 gms Condensed Milk

¼ teaspoon Saffron Strands

¼ teaspoon Cardamom Powder

Chopped nuts for garnishing [pistachios and almonds]

METHOD:
STEP 1 – In a big mixing bowl, add curds
and whisk it well until smooth and no lumps.

STEP 2 – Then add milk and condensed milk in it and again whisk well.

There should be no lumps. The consistency should be smooth.
STEP 3 – Add saffron and cardamom powder in it and mix it.

STEP 4 – Pour the yogurt in individual ramekin moulds.

STEP 5 – Add water in the baking tray till half. Keep the ramekin moulds in the baking tray.

STEP 6 – Now bake the yogurt in pre-heated oven at 170 degree C for 30-40 minutes or until yogurt is set. Check with tooth-pick like cake. Insert a tooth-pick in the middle of the mould and if it comes out clean means it is done. If thin liquid sticks to the skewer bake for another 5 minutes. [see notes]
STEP 7 – Once done allow it to cool a bit in oven as water in the pan is too hot right now. STEP 8 – Remove the ramekins from the oven and bring them to room temperature.


 Later refrigerate for about 3-4 hours. You can refrigerate yogurt overnight, if you don’t have any drooling souls around you. STEP 9 – Enjoy your chilled Bhapa Doi / Steamed Yogurt.

While serving, garnish with some chopped nuts on the top to add some crunch in the dessert.

NOTES: *Even the middle portion is little wobbly it will set once refrigerated.
