SUNFLOWER PARATHA / MIX VEG CHEESY PARATHA

Today’s recipe is a kid’s friendly recipe that is cheesy mix veg paratha or sunflower paratha. This is one of  my daughter’s  favourite paratha that I often make for her.Few days back when I was searching something on Internet, I saw a video of a roadside vendor. It was run by a lady and that lady making parathas very easily which really inspired me. She is making parathas as well as attending her costumers also. I really got impressed by her style of serving the paratha to the costumers. I tried to copy her recipe, don’t know about others but my family enjoyed the parathas.  These parathas tastes great when they served hot with loads of grated cheese sprinkled on the top. The name sounds little funny but I think it was given by the shape of the paratha. So let’s see what is there in that recipe. This is quick and easy recipe but needs some practice.  This paratha is nothing but a regular wheat  paratha sthuffed with vegetables and cheese mix. Don’t use tomato for stuffing because  then you are not be able to roll the parartha.  As kids love to eat pizza so I think this paratha is perfect for the times when they want to give them something that is  homemade as well delicious and healthy.


INGREDIENTS:
½ Cup Grated Cabbage
½ Cup Capsicum Juliennes
¼ Cup Carrot Juliennes
¼  Cup Sliced Onion
½ Cup Grated Cheese
¼ Cup Mozzarella Cheese
Salt as needed
¼ teaspoon Black Pepper Powder
1 teaspoon Red Chilli Powder
2 tablespoon Besan/ Gram flour

Other Things:
¼ Cup Grated Cheese
 2 tablespoon Chopped Coriander
1 teaspoon Mixed herbs
1 teaspoon Chilli Flakes
For making Paratha Dough:
2 Cups Whole Wheat Flour
1 teaspoon Oil
1 teaspoon Salt
Water

METHOD:
For making dough:
STEP 1 – Take a bowl or plate, add flour to it with oil and salt. Mix it well. Add water gradually  and make a smooth paratha dough. Cover it and keep it aside for 10 minutes.

For making the stuffing:
STEP 1 – Mix all the ingredients for stuffing. Mix well.

STEP 2 – Make a ball by mixing it well. Keep aside.

How to proceed:
STEP 1 – After 10 minutes, again knead the dough once again. Make equal portions with it.
STEP 2 – Make equal portions of the stuffing.

STEP 3 – Take one portion or the dough, dust little flour and make a cup/ bowl with it.
STEP 4 – Now place the stuffing ball in to it.Close all the sides well.

STEP 5 –  Make a ball again, roll it in flour and start rolling on a dusted platform.

STEP 6 – Roll it very gently so that the vegetables do not comes out.
STEP 7 – Heat a non-stick tawa on low flame.
STEP 8 – Place the paratha on tawa and roast it.
STEP 9 – When done from one side, flip it and roast it from other side.
STEP 10 – When roasted on both sides, apply ghee / butter/ oil and roast it well till crispy. When done, remove from the tawa and serve.

Serving :
STEP 1 - Give cuts to your paratha with the pizza cutter like pizza.

STEP 2 – Don’t give the cuts thoroughly, only upper crust need the cuts.Now open the cuts outwards like a sunflower.

STEP 3 –  Add grated cheese and chopped coriander over the paratha.
Serve hot cheesy paratha with mint chutney and tomato sauce and enjoy.
