APPLE-MAKHANA KHEER

With this ongoing fasting in the holy month of Shravan, here is an Appl-Makhana Kheer to satiate your sweet craving. Shravan the fifth month of the solar year is considered most auspicious month. Many Hindus observe fasts and perform Pujas during the month, especially on Monday. The fast done on Monday are known as Shravan Somvar Vrat. It may be austere or partial fast. This month is special for the worship of Lord Shiva. Devotees offer their prayers to Lord Shiva and then consume normal food. Food you eat is either Satvik, Rajasik or Tamasik according to its character and effect upon the body and the mind. Satvik food is always freshly cooked and simple, juicy. It is light, unctuous, nourishing, sweet and tasty which increases the energy of the mind and produces cheerfulness and mental clarity. Satvik food is highly conductive to good health. Milk, butter, ghee, fresh fruits, nuts, etc are Satvik. This healthy kheer is the perfect dessert for your indulge without feeling any regret. Apple-Makhana Kheer recipe for the ongoing Shravan month fasting and upcoming festivals as well.  Apples are extremely rich in major antioxidants and dietary fiber.  Kheer is a popular dessert that adults enjoy and it is made during special occasions and religious functions. A creamy apple-makhana kheer recipe- an Indian style pudding is easy to make in minutes and tastes delicious. You now know what to kick the festivities in with..!! 
INGREDIENTS:
100 gms Phool Makhana/ Lotus Seeds
½ Apple, grated
1 Cup Jaggery, grated
2 tablespoon chopped Nuts
½ litre Milk
2 tablespoon Ghee
METHOD:
STEP 1 – In a pan, heat 1 tablespoon ghee, add makhane and roast them well for 2-3 minutes. Keep aside to cool to room temperature.
STEP 2 – Remove the skin of apple. Grate it.
STEP 3 – Heat ghee in same pan, add grated apple, roast for 2 minutes.
STEP 4 – Then add jaggery and mix well. Cook well for 4-5 minutes.
STEP 5 – Remove from heat and keep aside.
STEP 6 – Wash the pan with water or use another pan. [sourness of apple may curdle your milk]
STEP 7 – Heat the pan with leftover ghee, add chopped nuts and roast for 1 minute.
STEP 8 – Then add milk in the pan and bring it to boil.
After cooling, add makhana in mixer pot and blend it to coarse powder. Keep aside.
STEP 9 – When the milk comes to boil, add coarse makhana powder in it and mix well.
STEP 10 – Simmer and cook it on low flame, stirring frequently till it is reduced to half its quantity.
STEP 11 – Switch off the heat and let the mixture cool completely.
STEP 12 – Now add apple-jaggery mixture in it and mix it very well.
STEP 13 – Cool it for ½ an hour in refrigerator
and pour in individual serving bowls, garnish with some chopped nuts and serve it chilled.
 NOTES: *Don’t add apple-jaggery mixture to milk when it is hot as the milk can get curdled. Cool it completely.
                    *This kheer is best served chilled, so you can make the kheer ahead of time.
