ALOO MASALA SANDWICH



Aloo masala sandwiches are very easy to make and my families favourite too. To make these sandwiches with a spiced potato stuffing is very easy. All you need are some boiled potatoes, spices, butter and bread.
Use any bread which you like or prefer for making these sandwiches. A day old bread is also fine. I took white sandwich bread for these sandwiches. These sandwiches  tastes like typical street food, I make them often at home. I used to watch the street food vendors carefully, while they used to dish out the delectable snacks one after the other.
Sandwiches are very popular street food among the people. You will find a sandwich stall near every almost college, near railway stations, in markets, etc. My mom also used to make sandwiches at home. I followed my mom’s recipe only and love it.
This recipe is for masala toast sandwich. Here the masala is made from boiled and mashed potatoes which are tempered with spices. Easy to make, especially if you have leftover boiled or mashed potatoes. The sandwiches are spiced up with green chutney and chaat masala.


INGREDIENTS:
 For Potato Stuffing:
3-4 Medium Potatoes[ boiled and mashed]
1-2 Medium Sized Onions
3-4 Green Chillies
1 tablespoon Oil
½ teaspoon Mustard Seeds
½ teaspoon Cumin Seeds
8-10 Curry Leaves
¼ teaspoon Turmeric Powder
A pinch os Asafoetida
Chopped Coriander
Salt as required

Other Ingredients:
10-12 Bread Slices [white, brown, whole wheat or multi grain]
Butter as required
Green Chutney
Tamrind Meethi Chutney [optional]
Red Garlic Chutney [optional]

METHOD:
Preparing the potato masala stuffing:
STEP 1 – Rinse potatoes very well and then steam or pressure cook them. The potatoes should be cooked well.

STEP 2 – Cool the potatoes and cool them and mash.
STEP 3 – Now chop the onions and green chillies.
STEP 4 – Heat a pan with oil and add mustard –cumin seeds and crackle them. Then add a pinch of asafoetida. Keep the flame low.
STEP 5 – Add curry leaves and sauté well. Then add chopped onions and green chillies and cook for 1-2 minutes.

STEP 6 – Add turmeric powder and salt as per taste. Add mashed potatoes and mix well. Cook for near about 3-4 minutes stir and mix well.

STEP 7 – Finally add chopped coriander and let it become warm or cool at room temperature.


Prepping, assembling and preparing the sandwiches:
STEP 1 – Spread butter evenly on the bread slices. A generous coating of butter does not allow the bread soggy when you apply chutney.
STEP 2 – Spread green chutney over the slices.

STEP 3 – Spread potato masala filling on the bread slices. Sprinkle a pinch of chaat masala powder over it.

STEP 4 – Cover with the other slice of bread on which you have spread butter and chutney.

STEP 5 – Place them in a preheated taster or grill. You can also toast these sandwiches in a hand held stove toaster.


STEP 6- Toast the sandwiches till crispy and golden. Repeat the procedure with the remaining bread slices.

 Remove in a plate and serve hot sandwiches with tomato ketchup and the other chutneys.   

 
Serve the hot aloo masala sandwiches with tomato ketchup or your favourite chutney and enjoy.

NOTE: Recipe can be doubled or tripled.
