INDIAN STYLE FUSILLI PASTA



Fusilli pasta Indian style….. Pasta comes in our menu once in a while to get rid of boredom of usual snack dishes. This is my second time that I made this fusilli pasta and I just tell you that it comes out very yummy. Last time I got pasta and tried a simple tomato sauce with it. I have already tried penne pasta but this time it’s a variation with the ingredients and with no store made pasta sauce. I love to make it with different coloured veggies, so I used red coloured carrot, green capsicum and tomato sauce in it. I never tried pasta before this, even after my daughter’s ordered it whenever go for outdoors. This time I have given a Indian touch to my pasta with our Indian spices which somehow tasty and yummy.You will only need your masala box . Try to find whole wheat flour pasta and make your pasta healthier for your kids. You can prepare in few minutes yet it will satisfying meal. Your kids will love this simple pasta.



INGREDIENTS:

 2 Cup Fusilli Pasta [You can use your favourite pasta such as penne, sphagetti,etc]

1 Sliced Capsicum

1 Onion Finely Chopped

1 Carrot Finely Chopped

3-4 Baby corns [Optional]

2 Tomatoes

1 ½  teaspoon Garlic Paste

1-2 teaspoon Red Chilli Powder

1 teaspoon Mixed Herbs/ Oregano

1 tablespoon Toamto Sauce

1 tablespoon Hot Chilli Sauce [optional]

2-3 tablespoon Olive Oil

Salt to taste


METHOD:


  To Cook Pasta:

 Cook according to the instructions of your package or follow this procedure.

STEP 1 – Bring water to boil in a big pot [filled to its half] and add salt and 1 teaspoon olive oil to it.


STEP 2 – Add pasta and cook over medium heat for about 10-12 minutes. You can cook it further for 2-3 minutes. [cooked until al dante and don’t make it soggy]


STEP 3 – Using a colander, drain the water from the pasta. Reserve ½ cup of water for later usage.
You can even give a cold bath to the pasta by running it under fresh tap water which helps in keeping the pasta separate.


For blanching tomatoes:

STEP1 – Boil water in a sauce pan with a little salt.


STEP 2 – Then add tomatoes to it and let it boil for further few minutes.


STEP 3 – Remove the water and keep the tomatoes under cold running water. Keep them aside until cool.


STEP 4 – Peel them and blend in a mixer pot till smooth paste forms. Your tomato puree is ready.


To prepare Masala Pasta:

STEP 1 – Heat olive oil in a wide heavy bottomed pan and fry sliced garlic until slight brown.


STEP 2 - Then add chopped onion and sauté until they are pink and soft and raw smell vanish.


STEP 3 – Now time to add finely chopped carrots and sauté them for 1-2 minutes
and then add rest of the veggies and fry for a minute.

STEP 4 – Add pureed tomatoes, tomato sauce
and spices  and mix well and fry until the oil separates.




STEP 5 – Add 4-5 tablespoon of reserved pasta liquid if required add more to get the medium sauce consistency.


STEP 6 – Add cooked pasta and mix well until all the pasta is covered with the sauce and is warm.


STEP 7 – Now add black pepper powder, Italian herbs and salt in it and mix well.  [remember we added salt while making pasta as well, so add accordingly.]


STEP 8 – Dish it out to the serving platter and garnish with some chopped coriander if using.



Serve it hot with tomato sauce.


 NOTE: You can also add garam masala for better taste and chopped coriander as well.
