शेंगदाण्याचे लाडू/ROASTED PEANUT LADDOO

Peanut Ladoo makes moments special and could be made in minutes with just two ingredients. Peanut Ladoo is a healthy snack compared to the packed junk foods. Generally we make peanut ladoo by making syrup but this is an easy version and takes hardly 20-30 minutes. 
  It is very easy and quick, healthy and delicious recipe. It's an easy, delicious, and healthy snack you can munch on anytime. This recipe of peanut laddoo is very simple and straighted forward. As a good source of healthy fats, it's one of the easy recipes with peanuts that you can prepare for the festival season. No hassle of syrup consistency is involved, instead jaggery is simply ground with peanuts to coarse powder and rolled in to balls.  Green cardamom powder give a nice aroma to it. The sweetness with a slight hint of slatiness of jaggery and the crunch of peanuts gives us instant energy and good for growing kids. This can be packed for kids snackbox too. As its soft and has a melt in the mouth texture all will like it especially kids.

INGREDIENTS :
1 Cup Peanuts
1 Cup Grated Jaggery[ adjust as per your liking and taste]
 A pinch of Cardamom Powder

 METHOD :
STEP 1 - Heat a pan on low flame and add peanuts.

STEP 2 - Roast them on a low flame, till they are evenly browned, keeping the flame low throughout.

STEP 3 - Switch off the flame and let the peanuts cool down.

STEP 4 - In the meanwhile grate jaggery . I use organic jaggery, its dark brown in colour.

STEP 5 -  Add cooled peanuts in mixer jar and grind the peanuts coarsely.

STEP 6 - For 1 cup of ground peanuts, you can take 3/4th cup of grated jaggery.


STEP 7 – Add jaggery in mixer jar and blend on pulse mode. We just want to combine jaggery with peanuts so be careful and do not blend for longtime. 


STEP 7 - Once they are mixed well, transfer to a mixing bowl and add cardamom powder and mix them together.


STEP 8 - Take a small portion and start rolling and shaping round ladoo.


STEP 9 - Repeat the same with the rest of the mixture and 
make more laddoos.


Laddoos are ready to serve. These can be stored for about 10 days.

NOTES - * I never remove the skin from the peanuts.
             *The oil ozed out from peanuts is just sufficient to make the laddoos.
             *Do not grind peanuts and jaggery separately and then mix it, it will not form a dough.
              *Laddoos can be stored in an air tight container for about 15 days.
              *Jaggery quantity can be adjusted as per your palate taste. ¾ cup to 1 cup is sufficient.
              *If in the end you are not able to roll the laddoos, then heat up the mixture for a minute, jaggery will melt and then you can make balls.
* Alternatively, you can add 1-2 tablespoon ghee in the mixture, mix well and then make ladoos.
              *If you don’t want the skin, then just rub the peanuts with your hands and blow away the skin. This is the easy way to remove the skin.
