SOYA PULAO

This is a healthy version of rice varieties that is easy to cook and tastes delicious. Soya provides vital nutrients that are useful for daily needs. These are known as textured vegetable protein. Soya chunks added to pulao are rich in fiber, carbohydrates and Vit B-12 too. My family is very fond of nutritious soya nuggets. You can add chopped veggies along with soya chunks. When I was a kid my mother used to make lots of dishes with soya chunks and being a kind of kid who eats only non-veg and hate veggies, she used to cook soya chunks which looks like chicken and tastes like that only. So I agree to eat soya. This is the best option for vegetarian people. I made this and refreshed my childhood memories. It came out really good. Let me know it if you try it. A clean  and simple pulao, tastes fantastic with any spicy curry or gravy or try it with any of your favorite raita. I made it quite simple and easy, because I feel that pulao has to be simple without lots of spice powders but it should have a whole lot of flavours from the whole spices.


INGREDIENTS:
½ cup Soya Nuggets, soaked
¼ cup Basmati Rice, soaked
Salt to taste
2 tablespoon Oil
1 teaspoon Cumin Seeds
¼ teaspoon Turmeric Powder
½ teaspoon Red Chilli Powder
1 teaspoon Coriander Powder
½ teaspoon Ginger, grated
¼ teaspoon Garam Masala Powder
1 medium Tomato, finely chopped
½ cup Green Peas
½ tablespoon Fresh Coriander Leaves, finely chopped

METHOD:
STEP 1 – Mix together soya nuggets, 1 cup water and salt in a bowl and cook in the microwave for 2-3 minutes.Here I soaked the soya chunks in luke warm water for about 5-6 minutes.

STEP 2 - Wash and soak the rice for about 1/2 an hour.
 STEP 3 - Heat oil in a pressure cooker, add cumin seeds, curry leaves and sauté for few seconds.
STEP 4 -  Add turmeric powder, red chilli powder and mix well. Add tomato, salt, green peas, coriander leaves and mix.
STEP 5 – Add soya nuggets and mix and cook for 1-2 minutes.

STEP 6 - Add soaked rice in it and add 2½ cups water and mix well.
STEP 7 - Cover the cooker and cook till 2-3 whistles are given out. Reduce heat and simmer for 2-3 minutes. Open the cooker when pressure reduces completely and serve hot.


Serve hot, delicious and tasty soya pulao with raita.
