A burger is a sandwich consisting of
one or more cooked patties placed inside a sliced bread roll or bun which is
bursting with flavor. Burgers are often served with cheese, lettuce, tomato,
onion and condiments such as mustard sauce, mayonnaise, and ketchup. Veg burger
was made in my kitchen for the first time because both of my daughters always
insisted to go out at McDonalds or KFC. I tried a veg aloo tikki with some spices
which turned out really awesome. The tikki was crispy on the outside and soft
on the inside. I deep fried it but you can try shallow frying or baking too. I
make these on occasions when we want to have street food like burgers or
frankies with French fries. I always avoid getting vegetable burgers from any
food chain outlets. I make veggie patties at home. Even though it takes time,
homemade ones are always better. This recipe post has many pictures so please
bear. My veggie patties are flavored with Indian spices. You can play around
and add your own choice of herbs and spices. All the credit for today's recipe goes to my best friend Arifa Shaikh, from Mumbai, who is a good cook and I love her makings, specially the non-veg dishes. So let’s start with the step by
step picture recipe of veg burger.
INGREDIENTS:
250 gms Chicken, minced
For Marination:
1 tablespoon Lemon Juice
1 teaspoon Garam Masala Powder
½ teaspoon Pepper Powder
1 Chopped Onion

3-4 Dry Kashmiri Red Chillies
½ teaspoon Fennel Seeds [saunf]
½ teaspoon Cumin Seeds [jeera]
½ teaspoon Dry Coriander Seeds
Other Ingredients:
1 Egg + 1 tablespoon Milk Mixture
Bread Crumbs for coating the
tikkies
2-3 tablespoon any spread of your
choice like veg Mayo / Mustard Sauce
1 tablespoon Tomato Sauce
Cheese Slices
Lettuce, Onion rings and Tomato
roundals
Oil for deep frying
METHOD:
STEP 1 - Mince the chicken
and add onion in it and add it to a mixer pot and ground it again for few minutes for making a fine paste.

STEP 2 – Dry roast all the
ingredients for fresh masala powder like Kashmiri red chillies, fennel seeds,
coriander seeds and cumin seeds. Cool it and make a fine powder of it. Keep
aside.
STEP 3 – Now transfer the
chicken-onion mince in a mixing bowl and add all ingredients under title “
marination”, mix well
and keep the mixture aside for at least 1 hour.
STEP 4 – Now divide the chicken mixture into small equal portions.
STEP 5 – Keep ready the egg mixture
and bread crumbs on your working platform.

STEP 6 - Try to shape into small
discs of 4 “ diameter.

STEP 7 – Now deep the tikki in
egg mixture
then coat them with bread crumbs and repeat it again. [see notes]

STEP 9 – Heat oil in a deep kadai on medium flame.
After 2 hours, remove the tikkies from refrigerator and deep fry them.

STEP 10 – Fry till golden brown
in colour and them remove with the help of slotted spoon. Drain excess oil on
the kitchen towel or tissue paper and tikkies are ready to use.
Assemble the burger:
STEP 1 – Cut the burger buns into
two halves. Heat tawa with little butter. Toast the buns from both sides.
STEP 2 – Take the base of the bun
pav, spread some mustard sause or any sauce of your choice, keep some lettuce
on it. Apply ½ tablespoon Sauce on the other bun and keep it aside.
STEP 3 – Then put 1 tikki on it.
After that put 1 cheese slice, few onion rings and tomato roundals. Then cover
it with the second half of the pav and your chicken tikki burger is ready to
serve.
Serve it with some tomato sauce
or some other sauce and some French fries and enjoy.
NOTES: *Use only half teaspoon
fresh ground masala powder for best results.
*You have to coat the tikki with
egg mixture and bread crumbs for 2 times.
