INSTANT RAWA BESAN DHOKLA

I am the person who likes to experiment and try out new dishes for my family. Few days back I made this yummy, Rawa-Besan Dhokla which is instant one and it comes out so fluffy, soft and spongy. A delicious and easy breakfast recipe to make at home. This amazing and mouth- watering Rawa- Besan Dhokla takes very few minutes for the preparations and just 20 minutes for cooking. The aroma of this dhokla is so tempting that makes you want to eat it. This is easy and quick and especially when there is no time and you are craving for something interesting which do not need to prepare the batter in advance and ferment it for 8-10 hours. The secret of its sponginess without fermentation lies in using popular Eno Salt. Follow the step-by-step picture recipe, notes and try it out and enjoy.   

INGREDIENTS:
1 Cup Besan Flour / Gram Flour
1 Cup Suji / Rawa /Samolina
2 teaspoon Green Paste [ ginger+garlic+green chillies]
Salt as needed
1 Packet Eno
1 Lime Juice
For Tempering:
5-6 Green Chillies, slited
1 teaspoon Mustard Seeds
1 teaspoon Sesame Seeds
1 sprig Curry Leaves
Chopped Coriander
1 Pinch Asafoetida
METHOD:
STEP 1 – In a mixing bowl, add suji and besan flour and mix well.
STEP 2 – Then add green paste in it and add water in it and mix well. Keep aside.
STEP 3 – Add water and keep the dhokla or pressure cooker to pre-heat.
STEP 4 – Then add Eno in the suji-besan mixture and mix immediately. Don’t over mix the batter.
STEP 5 – Pour it in the greased dhokla plate / any mould and pressure cook and steam it for 20 minutes.
 STEP 6 – Put off the gas stove and let it cool for some time.
STEP 7 – In a small tempering pan, heat oil and add mustard seeds in it.
STEP 8 – When mustard seeds crackle, add sesame seeds, asafoetida, slit green chillies, curry leaves in it. Switch off the stove.
STEP 9 – Pour this mixture on the dhokla. Then sprinkle some chopped coriander on it.
STEP 10 – Cut in to desired shape and size and serve.
Serve this yummy rawa- besan dhokla with mint chutney and sweet tamarind chutney and relish.

NOTES: Use a new packet of Eno always for the best soft, spongy and fluffy dhokla. Using already opened pack, dhoklas does not becomes spongy.
Add Eno when the batter is ready to pour in the steamed cooker.
You can substitute it with baking soda. Same quantity works well.
After adding Eno, whisk it only once or twice. Do not over mix the batter.
