DARK CHOCOLATE PUDDING


Today I am sharing a scrumptious Dark Chocolate Pudding recipe which is very easy and simple to make and makes your taste buds sing and dance. One of the best things about eating vegan is that often the desserts, such as this chocolate pudding, are actually somewhat healthy. Or at least, vegan desserts aren’t as unhealthy as the dairy and fat-laden versions. This quick and easy chocolate pudding recipe is super low-fat, very low in calories and it’ll satisfy your craving for chocolate pudding. I was a big fan of the cook and serve instant pudding…… the kind that you heated on the stove and it magically formed into a thick, smooth, creamy pool of yumminess. My daughter loved to spoon it into mouth while it was still warm like a molten chocolate lava cake without the cake. I love how easy it is to make the best chocolate pudding from scratch and this is definitely an activity you can get the little ones to help with. This pudding requires very few ingredients and it is totally egg free. Here I used corn flour/ corn starch and rice flour as a thickener and throw in a good amount of high quality semi-sweet chocolate. Topped with whipped cream and chopped nuts and this chocolate pudding is a dream come true. Serve it chilled.

INGREDIENTS:
2 Cups Milk
½ Cup Sugar
2 tablespoon Cocoa Powder
2 tablespoon Corn Flour
1 tablespoon Rice Flour
¼ teaspoon Salt
3 tablespoon Fresh Cream
50 gms Chopped Dark Chocolate
For garnishing:
Whipped Cream
Chocolate garnishes

METHOD:
STEP 1 – Combine together sugar, cocoa powder, rice flour, corn flour and salt in a bowl.
STEP 2 – Add milk in it and mix well. The mixture should be lump free.
STEP 3 – Place the sauce pan on the gas stove and heat it.
STEP 4 – Keep stirring it continuously
until you see small bubbles around the edges of the pan.
STEP 5 – At this stage, add cream in it and mix well.

STEP 6 – Then add chopped chocolate and mix well till chocolate get dissolved
and let the mixture thicken for about 2-3 minutes.
STEP 7 – Let it cool for some time. When the mixture is still warm, transfer the mixture into serving glasses or cups and refrigerate.
STEP 8 – Garnish with whipped cream, nuts and chocolate garnishes and serve.

Serve this yummy dessert chilled and enjoy.
