Aloo
paratha is a delicious shallow fried Indian stuffed bread popular among all
generations of people across India. Contrary to popular belief, Punjabi aloo
paratha can be easily prepared at home as this recipe uses ingredients that are
found in every Indian kitchen. Potato stuffing can be altered as per your
liking taste. Traditionally, this is a breakfast dish. But in modern lifestyle,
we don’t have that much physical work , so we can’t digest aloo in the morning.
So I make this for brunch and sometimes for dinner also. A must try recipe,
that can be enjoyed at any time of the day , for breakfast, lunch or dinner.
Whole wheat parathas are stuffed with succulent mixture of mashed potatoes
flavoured perkily with green chillies, onions and all. Paratha a really tasty and satiating
dish. Enjoy the luscious parathas with fresh home made curd / mango pickle
/tomato sauce.
INGREDIENTS :
For Dough:

Cups Whole Wheat Flour
Salt
to taste
Water
For Stuffing:
2-3
Boiled, Mashed Potatoes
1
Onion Finely Chopped [ optional ]
1
Tsp Cumin seeds
2-3
Finely Chopped Green Chillies
1
Tsp –Ginger-Garlic Paste
Salt
for taste
1 Tsp Dried Mango Powder [ optional ]
Other Ingredients:
1-2
Tbsp Whole Wheat Flour [ for rolling ]
Butter/
Clarified Butter [ for cooking ]
METHOD:
For Dough:
STEP
1 – Combine the whole wheat flour and salt and knead a smooth dough. Keep
covered for 15 minutes.
For
Stuffing:
STEP
1 – Boil the potatoes, cool them ,peel and mash.
STEP
3 – Make a smooth dough with it. Keep aside.
NOTE:
You can make a tempering with little oil, cumin seeds, chillies and garlic paste.
Add this to mashed potatoes, add chopped coriander, mix well and use for
stuffing.
How to Proceed:
STEP
1 – Divide the dough into small, equal portions.
STEP
2 – Roll a portion of a dough into a circle of 10 cm diameter circle.
STEP
3 – Place a little stuffing in the centre of the circle.
STEP
4 – Bring together all the sides in the centre and seal tightly.
STEP
5 – Roll the parathas as per desired size . Use some flour while rolling the
parathas.
STEP
6 – Heat a non-stick pan /tava and cook the parathas using butter or clarified
butter until golden brown .
STEP
7 – Repeat the same with the remaining dough and stuffing. Serve to your dear
ones.
Serve hot parathas with homemade curd or
white butter or mango pickle or simply with tomato sauce.
