ROSE AND GULKAND LASSI

Lassi is a cooling and refreshing summer drink. Sweet lassi is quite popular in Punjab and North India. This lassi which I make at home is not heavy .The key to good lassi is to use thick homemade yogurt [curd ]that is absolutely chilled. This popular, creamy, sweetened yogurt drink is a gem among Punjabi food recipes. Rajasthan, UP and Delhi to find street vendors selling frothy lassi in a mtaka [ clay pots]. There are three versions of lassi- Sweet , Salted and Masala. You can flavour it with cardamom powder, saffron ,dry fruits, ice cream and more. Before some days I shared sweet ice cream lassi with you .Here I am sharing a sweet lassi with the flavour of rose and gulkand. Hope you all like this slight change in the lassi version.

INGREDIENTS:
3 Cups Yogurt[ chilled ,thick and beaten smooth]
1 Cup Milk / Water [chilled]
4 Tbsp Sugar [ honey]
 2 Tbsp Rose Syrup
 1 Tbsp Gulkand
2 tablespoon Nuts, chopped

METHOD :
STEP 1 - Use only thick curd and with the help of beater / hand blender beat it and make smooth.
STEP 2 - Add sugar and chilled milk/ water and again beat for 2-3 minutes or till it become frothy.
STEP 3 - While beating add rose syrup and a spoonfull of gulkand in it .
SEP 4 - Pour into the serving glasses and garnish with some gulkand on the top .

                 Serve chilled lassi garnished with gulkand and some chopped dry fruits.

NOTE : Adding full fat milk will yield a rich and creamy lassi.
