Lassi is a cooling and refreshing summer drink. Sweet lassi is quite popular in Punjab and North India. This lassi which I make at home is not heavy .The key to good lassi is to use thick homemade yogurt [curd ]that is absolutely chilled. This popular, creamy, sweetened yogurt drink is a gem among Punjabi food recipes. Rajasthan, UP and Delhi to find street vendors selling frothy lassi in a mtaka [ clay pots]. There are three versions of lassi- Sweet , Salted and Masala. You can flavour it with cardamom powder, saffron ,dry fruits, ice cream and more.
