MIX DRY CHUTNEY



This is a dry textured chutney prepared from garlic,ground nuts and spices and must have condiments for making delicious vadapav.This chutney is so widely used in Maharashtra for making vadapavs that it’s commonly referred as vadapav chutney. The uniqueness  of this dry chutney recipe is that roasted groundnuts and sesame seeds are crushed with oil sautéed garlic,red chilli powder and coriander powder that gives it a delicious hot and spicy character.



INGREDIENTS:

8-10 Garlic Cloves

½ Cup Grated Dry Coconut

1 Tbsp Roasted Peanuts

1 Tbsp Roasted Sesame Seeds

2 Tsp Red Chilli Powder [ as per taste]

1 Tsp Dry Coriander Powder

Salt

 Oil


METHOD :

Step 1 – Heat a pan with oil,roast the garlic cloves on low flame for approx. 1 minute. Keep Aside.

Step 2 – Dry roast grated coconut, peanuts and sesame seeds separately on low heat.

Step 3 – Let them cool for 5 minutes .Grind all together in a mixer grinder with chilli powder, coriander powder and salt.

Step 4 – Grind them until medium coarse powder. Taste and adjust salt and chilli powder if required.

Step 5 – Ready chutney can be stored up to 10-15 days in refrigerator.



NOTE: Use it as a spread for preparing vadapav / burgers/rolls/sandwiches /dosa or you may enjoy it with simple dal-rice.
